If you know me, I have about 6 meals I make really really well and then everything else I make is questionable ;) Ask, hubby....I made the most disgusting butternut squash soup the other day. He ate it because he is nice, but he kindly asked, "what was in that" after he ate it. I am not the best cook, but I have some really good, delicious go-to meals. My family members and friends are probably sick of them, in fact, I made this chili over the weekend for my daughter's baptism party. This can be done in the crock pot or on the stove. I like to use the crock pot because I feel a sense of accomplishment when I turn the dial to low and leave it alone....I don't have to think about dinner the rest of the day. This is honestly the easiest recipe ever and my kids like it...well, they eat it with chips and call it nachos, but it is a meal we can all eat TOGETHER :) One meal!
Ingredients: 1 onion minced 1 clove garlic minced 1 teaspoon of fresh lime juice (put in at the end with corn) 1/2 cup cilantro or scallions (as a topping) 15 ounce can of tomato sauce 30 oz can black beans, rinsed and drained 30 oz can kidney beans, rinsed and drained 30 oz can pinto beans, rinsed and drained 30 oz can diced tomatoes with chilies 14 oz frozen corn (put in at the end, 1/2 hr before serving) 1 1/2 oz spiced chili seasoning Put it in the crock pot on low for 4-6 hours.
