My Favorite Roasted Vegetable Tray One of the ways I am able to get lots of veggies in every day is because I prep 1-2 trays of roasted veggies every Sunday. The great thing about this method is that you can change the veggies based on what you want, have on hand, and what is seasonal. I LOVE winter vegetables, brussel sprouts have been a favorite of mine since I was a kid, so I always include them in my tray. I know they aren’t for everyone though, so I will include some alternate ideas at the bottom. Serving Size: 4-6 Ingredients: 4-5 Carrots 2-3 Celery Stalks 1 large Sweet Potato 1 lb. Brussel Sprouts 1 lb. Broccoli 1 small Onion Instructions: Preheat oven to 400 F Peel Carrots and Sweet Potato Dice Carrots, Celery, Sweet Potato, and Onion Cut Brussel Sprouts in halves or quarters depending on the size Cut Broccoli into small pieces Line your tray with foil and drizzle with olive oil, I just put a small amount on the tray and spread it out with my hand. I find this helps the vegetables not stick instead of coating the veggies with oil. Layer your veggies on the tray; I usually end up doing two trays because if there are too many veggies they don’t all cook through. Once you’ve filled the tray with veggies, I drizzle the top with olive oil and season with salt and pepper. My husband always says I love food bland, so season to your liking. Put tray in the oven for 30-40 minutes and mix them halfway through Keep in a Tupperware or separate into small tupperwares for easy access for lunches or dinners Notes: If I have a lot of veggies, I make two trays. One tray will have carrots, sweet potatoes, and red potatoes. The second tray will have broccoli, celery, and brussel sprouts. Some other vegetables that would work are: parsnips, mushrooms, squash, turnips, rutabagas, etc.… I try to keep veggies with similar cook times on the same sheet.
