overnight honey steel cut oats

*This delicious recipe is a guest post from an instagrammer I have been following & inspired by. I reached out and asked her to share one of her favorite breakfasts and she so kindly shared these steel cut oats!  A big thank you to Ana Alarcon, the meal prep pro! I hope you take a moment to follow her accounts, read her blog and stay in touch with her via instagram, twitter and pinterest! Please let us know if you make this recipe :)

When eating oats, I’ve learned that the best option is steel cut oats. Yes, we are all busy, but in 5 minutes of your day, you can cook a better breakfast. Quick oats “save” you time, however, it has hidden added sugars and are their degree of processing is very high. Steel cut oats can be easily prepared overnight and they will provide you with less sugar, less calories and more flavor.

Ingredients:

Serves 3

1 cup of steel cut oats
4 cups of water
¼ teaspoon of salt (optional)
1 tablespoon of raw honey
1 ½ of unsweetened almond milk

Toppings:

1 banana
1 handful of blackberries
1 tablespoon of sesame seeds
1 handful of raisins.

Method:

The night before:

Get out a medium saucepan, soup pan or Dutch oven and pour in 4 cups of water. Turn the heat to high and bring the water to a rapid boil.

When the water comes to a full boil, pour in the steel cut oats and salt.

Give a quick stir and let the oats cook for 1 minute. I always set my timer here.

After one minute, turn off the heat, give the oats a quick stir, cover and then let them sit out overnight. Yep, that’s all there is to it. Easy peasy.

Now you have your oats ready.

In the morning:

Turn the heat back on, add the milk and stir the oats. Once it is mixed add the honey. You only want to warm up your oats here, so no need to bring it to boil. Let it cook for around 3-5 minutes and stir every minute, make sure the oats don’t stick to the bottom.

Once the oats are warm, pass them to a bowl and top them with banana, blackberries, sesame seeds and raisins.

You could also make them for your meal prep, just save the oats in a container without adding the milk. They should last you around 3-4 days.
